1/4 cup diced tomatoes
1/4 cup shredded cheese (or vegan cheese for a vegan option)
Salt and pepper to taste
Olive oil for cooking
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add the chopped Lion's Mane mushrooms and sauté until they start to brown.
3. In a bowl, whisk the eggs (or tofu) and season with salt and pepper.
4. Pour the eggs (or tofu) over the mushrooms and cook until they start to set.
5. Add spinach, tomatoes, and shredded cheese.
6. Continue to cook, stirring gently until everything is well combined and cooked through.
7. Serve the Lion's Mane mushroom scramble hot.
Recipe 2: Lion's Mane Mushroom Soup (Vegan)
Ingredients:
2 cups Lion's Mane mushrooms, sliced
1 onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 cup coconut milk
1 tablespoon olive oil
1 teaspoon curry powder
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
1. In a large pot, heat the olive oil over medium heat.
